This Week’s Flexible Meal Plan (+ Life Updates!)

Hey friend,
This week is shaping up to be such a good one — the weather is going to be summer-like (82 degrees on Tuesday, whaaat!), and we’ve got some fun things happening: pollinator workshop, back to school after a week off, meet-ups with our friends, Tinkergarten, a healthy happy hour, and even the cleaners coming on Friday (major celebration 🙌).
We didn’t really stick to last week’s meal plan. But the plan is never about perfection. It’s about having a few ideas in place so when life is a little chaotic, (ok so like every day,) I’m not scrambling at 5PM.
Here’s what we’re aiming for this week:
🥳 Monday: Chicken wings (defrosting + marinating them today so I'm not scrambling tomorrow AM). I'll serve this with a classic caesar salad or something like that.
🍔 Tuesday: Cheeseburger sliders, a side salad, sweet potato fries and alll the toppings. Wednesday: Breakfast-for-dinner — always a favorite
Thursday: Probably leftovers/clean out the fridge dinner
🍕 Friday: Takeout or freezer pizza always on Fridays! (we love Rao’s for our emergency pizza stash)
✨ My Approach to Meal Planning:
Defrost key proteins early (ground beef, chicken wings)
Keep meals flexible and kid-approved
Expect real life to happen — and have backup options
The goal isn’t to control every meal perfectly. I don't cook a lot of food ahead; I may keep some prepped salads on hand like quinoa and chicken and some items in the freezer for breakfast on school days (pancakes, waffles, blueberry muffins.) Other than that, I make everything the night of which is just my preference.
Kimmie also wants to make chocolate cupcakes today and I'm not objecting to that!
