There’s something SO comforting about risotto, isn't there? It's not something I grew up eating but once I discovered the creamy deliciousness while in college, I was hooked. To be honest, it's kind of a pain on the stovetop; heating the stock, adding it to the rice little by little and stirring constantly to get the perfect, velvety texture.
The only food blog I consistently reference, and follow is How Sweet Eats. Jessica posted a version of baked risotto YEARS ago and I thought, well isn't that genius?! So, I had to make my own version that would appeal to the taste buds in our house.
This baked version is my go-to for busy weeknights or when I’m hosting and want something hearty, delicious, and deceptively simple. It's the kind of dish that brings comfort without demanding constant stirring and you can serve it on its own or with a protein. I ate mine with scallops tonight but love it with salmon, too!
Why Moms (and Everyone Else) Love This Dish
It’s made with wholesome, simple ingredients and feels like a warm hug in a bowl. Plus, it’s flexible—swap vegetables based on what you have on hand or what’s in season. Use homemade stock or store-bought. Swap cheese and cream with non-dairy options you prefer. It’s satisfying, nourishing, and perfect for feeding the whole family.
Let’s Make It Together!
The next time you’re craving a comforting, homemade meal but don’t want to spend hours in the kitchen, try this baked risotto. Trust me—you’ll never look at risotto the same way again.
